Chlorophyll Degradation in Green Tissues: Olives, Cabbage and Pickles
نویسنده
چکیده
The chlorophylls are the main pigments in green plants, algae and other photosynthetic microorganisms. They belong to a class of pyrrole ring compounds known as porphins. Derivatives of porphins are called porphyrins. Phorbin, a porphyrin formed by the addition of another ring structure, serves as the basis for all chlorophyll molecules (Fig. 2.1). Different types of chlorophyll may arise depending on the chemical substituents on the R and R′ group (Fig. 2.2). Chlorophylls are predominantly found in the chloroplasts of plant cells. They are of hydrophobic nature and are found alongside carotenoids, lipids and lipoproteins. The carotenoids serve an important physiological function. Carotenoids prevent

Composition of pigments and colour changes in green table olives related to processing type.
Brownish colourations in Natural green table olives (non-treated with alkali) make this product less attractive to consumers than Spanish-style green table olives (treated with alkali), which develop a more appreciated bright golden-yellow colour. These colour differences were studied in relation to changes in the composition of chlorophyll and carotenoid pigments, as well as polyphenolic compo...
متن کاملThe effects of tentoxin on chlorophyll synthesis and plastid structure in cucumber and cabbage.
To determine if chlorosis caused by tentoxin, a toxin produced by Alternaria tenuis Nees., is due to interference with chlorophyll synthesis directly or to disruption of normal chloroplast development, the effects of the toxin on these processes in cucumber (Cucumis sativus L.) and cabbage (Brassica oleracea L., var. capitata) were studied. Cucumber cotyledons are highly sensitive to the toxin ...
متن کاملNondestructive evaluation of anthocyanins in olive (Olea europaea) fruits by in situ chlorophyll fluorescence spectroscopy.
Anthocyanins (Anths) in olive (Olea europaea L.) fruits at different degrees of pigmentation were assessed nondestructively by measuring chlorophyll fluorescence (ChlF). The method is based on the comparison of the ChlF excitation spectra from olives with different pigmentation from green to green-red, reddish-purple, and purple. The logarithm of the ratio between the fluorescence excitation sp...
متن کاملBrWRKY65, a WRKY Transcription Factor, Is Involved in Regulating Three Leaf Senescence-Associated Genes in Chinese Flowering Cabbage
Plant-specific WRKY transcription factors (TFs) have been implicated to function as regulators of leaf senescence, but their association with postharvest leaf senescence of economically important leafy vegetables, is poorly understood. In this work, the characterization of a Group IIe WRKY TF, BrWRKY65, from Chinese flowering cabbage (Brassica rapa var. parachinensis) is reported. The expressio...
متن کاملChlorophyll Degradation.
Although the loss of green color in senescent leaves and ripening fruits is a spectacular natural phenomenon, research on chlorophyll breakdown has been largely neglected until recently. This review summarizes knowledge about the fate of chlorophyll in degreening tissues that has been gained during the past few years. Structures of end- and intermediary products of degradation as well as the bi...
